Shake Shack is hoping to bring all plant-based people to their yard with their new shake and frozen custard. They have teamed up with the NotCo, a Chilean food-tech company that produces plant-based alternatives, to offer a dairy-free version of their famous shakes (news from Food Navigator). The shake combines NotCo’s popular Not Milk product with its creamy chocolate custard that can also be purchased in scoops.
NotCo utilizes an Artificial Intelligence program, they call Giuseppe, to analyze animal-based products and replicate them with plant-based alternatives. NotCo has had major success with their Not Milk product and has many new products in the works. Their partnership with Shake Shack shows the restaurant industry is continuing to take notice of the rising popularity and demand for plant-based menu items outside of meat analogs such as burgers.
Shake Shack is featuring both the chocolate shake and chocolate custard for a limited time in select New York & Florida locations and may soon expand the offering to additional restaurants nationwide.
